Viraj Borkar is a trained chef, an ambitious and creative consultant, and entrepreneur based in NYC. He is the founding member and General Manager of INDAY, an acclaimed newly established fast casual. In the entrepreneurial direction Viraj established project Sara inc. as a small catering and pop up company that quickly gained him recognition via Bloomberg, Gothamist, Relais & Chateaux and few other local media as a specialty in Omakaze inspired cooking style. Viraj holds a B.Sc in Hospitality from the esteemed IHM Mumbai, India where he is originally from and specialized in Culinary at The Culinary Institute of America. As a recipient of the NUCCI scholarship Viraj travelled California studying the industry on the other coast, trained for Bocuse D'Or 2010 to assist Chef James Kent in USA finals and carries, in his repertoire, experience of working in Tabla, Jean-Georges, ABC Kitchen, Michelin Starred Tamarind and renowned restaurants in Chicago and Washington DC. Viraj recognized that there is more to a plate of food than just perfection of flavors- it is the emotions, the life and the stories of people behind that plate. With a vision to give back to the people toiling hard behind the lines he founded humans behind The Line.
Jenny Dorsey | JennyDorsey Consulting
Jenny is a professional chef, business & culinary consultant, and entrepreneur based in NYC. She is the Co-Founder and Chef of I Forgot It’s Wednesday, a popular NYC supperclub; in the consulting realm, she specializes in menu development & research and strategic planning for culinary brands. She holds a B.A. in Finance from the University of Washington, a Diploma of Culinary Arts from the Institute of Culinary Education and was an MBA Candidate at Columbia Business School. Jenny started her career as a management consultant at Accenture, working with fashion & luxury brands on strategic planning and operations and moved to designing operations for Le Pain Quotidian in three different countries. She has the Bocuse scholarship of training in michelin starred Atera under her belt along with many other fabulous achievements. With her network, her vision and her knowledge Jenny seeks to give back to the industry community and joined forces to create humans behind The Line.
Edward and Ian Pei | Peicheck Productions
Edward Pei and Ian Pei co-Founders of Peicheck Productions specialize in the art in a contemporary fashion. Their photography skills range from wedding, portrait and event photoshoots; their main expertise rests on using a combination of various artistic skills and modern techniques capturing the most significant and memorable moments for anyone to cherish in a glance albeir forever. They strive to contribute to all fields of visual artistry and create a lasting impression with everyone to interact with. Peicheck productions have garnered organic acclaim in View Bug and Wedding Wire and have covered shoots in New York City, Tri-State Areas and San Diego. Ed and Ian have always sought to capture expressions, emotions and tell a story of a person through artistic portraiture photography. They joined hands with Viraj on the journey of humans behind The Line to tell the stories of the various people behind the stage of the restaurant world through their lenses.
